apple pork hagu







in a dutch oven cook 12 oz. 1-inch boneless pork pieces, 1 thinly sliced onion, & 2 cloves minced garlic in 1 tbsp. oil over mdium hear 5 minutes.  add 1/4 cup apple cider; cook 1 minute.  add 2 tbsp. tomato paste.  cook & stir 1 min.  add 2 chopped apples, one 14 1/2-oz. can undrained dices tomatoes, & 1 cup chicken broth; bring to boiling.  reduce hear; simmer, uncovered, 15 mins.  stir in 1/4 cup olives & 1/4 cup fresh parsley.  season to taste. serve over polenta; sprindkle w/ parmesan.
